Beef Stew with Root Vegetable - Heart Smart-Stews

  1. Spray a heavy bottomed pan lightly with vegetable spray
  2. Allow pan to become extremely hot
  3. Add beef and stir until well-browned on all sides
  4. Add onions and garlic, cook until onions are transparent
  5. Add tomato paste and tomatoes and cook for 2 minutes
  6. Add brown sauce, thyme and black pepper
  7. Cover and simmer for 2 hours
  8. Add celery root, carrot, yellow turnip and red skin potatoes. Continue to simmer until vegetables are tender (approximately 30 minutes)
  9. Serve hot

250 ml celery root -- 1" dice
250 ml carrot -- 1" dice
250 ml yellow turnip -- 1" dice
250 ml red skin potato -- 1" dice
